Cheddar jalapeño muffins

I had a dream about some cookies, and woke up in the middle of the night with a NEED to bake them. But I didn’t have ingredients on hand, and the stores are closed so I looked at what I did have. Next thing I knew, these were done. Tagging @jukebox because they reminded me of you. Happy belated birthday!

I used to make something at the bakery called blast off brownies, which were brownies with cayenne pepper. We made them on April Fool’s day. They look like ordinary brownies, and immediately after biting it it just tastes like an ordinary brownie, but as you chew, you start to notice the cayenne.

Never tried those. Cheddar and jalapeño surely goes together. I love jalapeño. Here we have jalapeño cheese and I love it.

1.5 cups flour, 1 tbsp baking powder, 1/2 tsp salt, sift together. Make a well in the center. In a seperate bowl, mix together 1 cup milk, 1 egg, 1/4 cup melted butter. Pour this into the well and fold together. Add 2 diced jalapeño peppers and three cups of shredded cheddar cheese, fold together until evenly mixed. Scoop into cupcake trays, add a sliceof jalapeño to the top of each one. bake for 20 minutes at 375 F

Looks delicious! I love jalapenos, so combining that with cheddar into muffins sounds yummy.
