A question about baking

I’ve tried to make meringue several times. I’ve always followed the recipe yet my meringue never seems to turn out.

It is really tricky to fold the egg whites in with the sugar without them deflating. You have to go slow, and fold rather than stir, and don’t let them sit too long. I have some recipes for things i have made with deflated meringue batter before, so it doesn’t go to waste. I can try to find them if you would like.

I cheat and use meringue powder.

I hate dealing with all those eggs,

And they’re so temperamental.

With the powder all you do is add water and whip up.

Turn out perfect every time.

Haha :joy: I never knew meringue involves folding. I did ok yesterday when I made it. It wasn’t perfect but I didn’t bomb either.
